After the winter festivities and overindulgence, kick start your January detox with these scrumptious sugar-free snack bars. They are easy and quick to make and the ingredients can be variated to match those in your cupboard. They are so tasty and packed full of goodness, it’s hard to believe you are being good to your body. Just don’t eat them all at once!
100g nuts (walnuts, almonds, cashews, pecans, brazil, etc)
100g seeds (mixed amounts of sunflower, sesame, pumpkin, flax, chia, etc)
30g coconut powder or corn flour
2tsp ground cinnamon
1/2 tsp salt
50g dried fruit (blueberry, apricot, raisins, cranberry etc)
150g chopped fresh fruit (orange, satsuma, melon, apple, pineapple, etc)
Heat the oven to 180C
Roughly chop the nuts and mix in all other ingredients except fruit.
Add fruit and mix together until clumps are forming.
Line a rectangle flat dish, about 15cm x 25cm, with baking paper and press in the mixture firmly, to remove all air pockets. Bake for 20 minutes.
Leave to cool in dish for 15 minutes before removing and slicing into bars.
