sugar free snack bars

100g nuts (walnuts, almonds, cashews, pecans, brazil, etc)

100g seeds (mixed amounts of sunflower, sesame, pumpkin, flax, chia, etc)

120g oats

30g coconut powder or corn flour

2tsp ground cinnamon

1/2 tsp salt

50g dried fruit (blueberry, apricot, raisins, cranberry etc)

150g chopped fresh fruit (orange, satsuma, melon, apple, pineapple, etc)

Heat the oven to 180C

Roughly chop the nuts and mix in all other ingredients except fruit.

Add fruit and mix together until clumps are forming.

Line a rectangle flat dish, about 15cm x 25cm, with baking paper and press in the mixture firmly, to remove all air pockets. Bake for 20 minutes.

Leave to cool in dish for 15 minutes before removing and slicing into bars.

Melly, thank you, your snack bars look scrumptious and I am sure tasty and delicious. After all the Christmas turkey, chocolate and way too much wine I should consider eating only the snack bars for a month to cleanse my system. LOL. Happy New Year. Marlene
